Most people make and enjoy bruschetta from time to time 
I make it with fresh basil, onions and tomatoes mixed with a little olive oil and spread on bread. It is so simple. You can add mozarella too. 
We often make Chicken Spiedies which are a local creation. Basically they’re just marinated chicken skewered and grilled, then served in a piece of Italian bread or a roll..and oh so delicious.
We love to cook them in the summertime but to make them extra delicious, I top chicken spiedie sandwiches with bruschetta. It makes them irresistable.

I bet the combination on a sandwich would be awesome! I love bruschetta too and should make some – right about now!
